INGREDIENTS
5 oz Salmon Fillet
6 spears Asparagus
1 cup Cauliflower florets
1 tsp Unsalted Butter
1 tsp Extra-Virgin Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side until a golden crust forms and the inside is just cooked through.
While the salmon sears, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender yet crisp.
For the cauliflower mash, steam the cauliflower florets and the garlic clove in a separate steamer basket or in the microwave until very tender, about 6-8 minutes total.
Transfer the steamed cauliflower and garlic to a blender or use an immersion blender. Add the unsalted butter and a pinch of salt and pepper, and blend until smooth and creamy. If needed, add a splash of water to reach desired consistency.
Plate the salmon alongside the steamed asparagus and a generous scoop of cauliflower mash. Garnish with an extra sprinkle of salt and pepper if desired, and serve warm.
