INGREDIENTS
6 oz Chicken Breast
1 cup Green Beans
1 tbsp Olive Oil
2 tbsp Lemon Juice
1 clove Garlic
1 tsp Mixed Dried Herbs
Salt and Black Pepper, to taste
PREPARATION
Preheat your oven to 425°F (220°C).
In a small bowl, combine lemon juice, minced garlic, mixed dried herbs, salt, and black pepper.
Place the chicken breast in a shallow dish and pour half of the lemon herb mixture over it. Let it marinate for at least 15 minutes.
On a baking sheet lined with parchment paper, arrange the marinated chicken breast. Drizzle a little olive oil over the chicken.
Roast the chicken in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
While the chicken is roasting, heat the remaining olive oil in a skillet over medium-high heat.
Add the green beans and the remaining lemon herb mixture into the skillet. Sauté for about 5-7 minutes until the green beans become tender yet crisp.
Plate the roasted chicken with a generous serving of crispy green beans. Optionally squeeze extra lemon juice over the top for added zing.
