INGREDIENTS
4 oz Salmon Fillet with skin
2 Large Eggs
1 cup Grape Tomatoes
1 cup Fresh Spinach
1 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil.
Season the salmon fillet with salt and pepper. Place the salmon fillet skin-side down in the skillet and sear for about 3-4 minutes until the skin is crispy, then flip and cook for an additional 2-3 minutes until cooked through.
While the salmon cooks, boil the eggs in a small pot of water for about 9-10 minutes until hard-boiled. Once done, cool them in ice water, peel, and slice.
In a salad bowl, combine fresh spinach, grape tomatoes, and a drizzle of lemon juice. Toss gently to mix.
Place the seared salmon on top of the greens, add the sliced hard-boiled eggs around the salmon, and finish with an extra light drizzle of lemon juice or a sprinkle of salt and pepper as desired.
Serve immediately and enjoy your nutrient-packed, crispy salmon salad.
