INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower (for mash)
1 tsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes for medium doneness.
While the salmon cooks, steam the green beans until tender-crisp, about 4-5 minutes. In a separate small pan, heat the olive oil over medium heat and sauté the minced garlic for 1 minute until fragrant, then toss the steamed green beans with the garlic and a squeeze of lemon juice.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer to a bowl and mash with a fork or immersion blender until smooth. Season with a little salt and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Drizzle any remaining pan juices over the salmon and enjoy immediately.
