INGREDIENTS
7 oz Salmon Fillet
0.5 cup Steamed Asparagus
1 cup Cauliflower florets
1 clove Garlic
1/4 cup Unsweetened Almond Milk
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with a paper towel and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down (if applicable) and sear for about 3-4 minutes until a golden crust forms, then carefully flip and cook for an additional 3-4 minutes until the salmon is cooked through but still moist.
While the salmon cooks, steam the asparagus until tender, about 4-5 minutes, and season lightly with salt.
In a pot, steam the cauliflower florets and garlic until very tender, around 8-10 minutes.
Transfer the steamed cauliflower and garlic to a blender, add the unsweetened almond milk, and blend until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of garlic cauliflower mash. Serve immediately.
