INGREDIENTS
1/2 cup Rolled Oats (40g)
1/4 cup Pumpkin Puree (61g)
1 scoop Vanilla Whey Protein Powder (30g)
3 Egg Whites (approx. 100g)
1/4 cup Unsweetened Almond Milk (60g)
1/2 teaspoon Baking Powder
1 teaspoon Pumpkin Spice
PREPARATION
Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
In a medium bowl, combine the rolled oats, pumpkin puree, vanilla whey protein powder, egg whites, almond milk, baking powder, and pumpkin spice. Stir until a smooth, thick batter forms.
Allow the mixture to rest for 5 minutes so the oats can absorb some of the liquid, thickening the batter further.
Spoon the batter onto the prepared baking sheet, shaping it into 4 uniform rings or discs. You can lightly grease a round cookie cutter or use your fingers to shape the rings.
Bake in the preheated oven for 15-18 minutes, or until the edges are set and the centers have puffed up slightly.
Remove from the oven and let cool for a few minutes before gently removing the rings from the sheet.
Enjoy warm or at room temperature as a protein-packed meal on the go.
