1 cup Chickpeas (164g)
200g Firm Tofu
1.5 cups Cauliflower Rice (107g)
2 Tbsp Fresh Dill
2 Tbsp Lemon Juice
1 tsp Olive Oil
1 Garlic Clove
Salt & Pepper to taste
PREPARATION
Rinse and drain the chickpeas. Pat firm tofu dry and cut into small cubes.
Heat the olive oil in a non-stick pan over medium heat. Add the garlic and sauté for about 30 seconds until fragrant.
Add the tofu cubes and lightly fry until edges are golden, about 5 minutes. Season with salt and pepper.
In a bowl, mix chickpeas with the chopped fresh dill and lemon juice. Gently combine with the warmed tofu.
Prepare cauliflower rice by either lightly sautéing it in a separate pan for 3-4 minutes or using it raw for a crunchier texture.
