INGREDIENTS
300 grams Extra Firm Tofu
1/2 cup Shelled Edamame (75g)
1 medium Red Bell Pepper
1 medium Carrot
1 cup Broccoli
1/2 cup Snap Peas
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Toasted Sesame Seeds
1 tsp Cornstarch
PREPARATION
Press the tofu for 15-20 minutes to remove excess moisture and then cut it into 1-inch cubes.
In a bowl, toss the tofu cubes with 1 teaspoon of cornstarch until evenly coated.
Heat sesame oil in a non-stick skillet or wok over medium-high heat. Add the tofu cubes and fry until crispy and golden on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
In the same skillet, add the chopped red bell pepper, sliced carrot, broccoli florets, and snap peas. Stir-fry the vegetables for 3-4 minutes until they start to soften but retain their vibrant color and crunch.
Stir in the shelled edamame, then add the low-sodium soy sauce and rice vinegar. Toss well to evenly combine the flavors.
Return the crispy tofu to the skillet and gently fold it into the vegetable mixture. Allow everything to heat through for an additional 1-2 minutes.
Finish by sprinkling toasted sesame seeds over the stir-fry. Serve hot and enjoy your nutrient-packed, flavorful meal.
