INGREDIENTS
7 oz Salmon Fillet
1 cup Green Beans
1 clove Garlic
1 cup Cauliflower
1 tsp Butter
1 tsp Olive Oil (for green beans)
1/2 tsp Olive Oil (for mash)
Salt and Pepper to taste
1 tsp Lemon Juice (optional)
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil. Once hot, place the salmon fillet skin-side down and sear for about 4-5 minutes until the skin is crisp.
Flip the salmon and cook for an additional 3-4 minutes until the fish is just cooked through. Optionally, drizzle with lemon juice and set aside.
In a separate skillet, add the green beans and 1 clove of minced garlic along with a pinch of salt and pepper. Sauté for 5-6 minutes until the beans are tender but still crisp.
For the cauliflower mash, steam the cauliflower florets for about 8-10 minutes until soft. Transfer to a blender, add 1 tsp butter and 1/2 tsp olive oil, and blend until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm and enjoy!
