INGREDIENTS
5 oz Chicken Breast
1/4 cup Panko Breadcrumbs
2 tbsp Parmesan Cheese
1/4 cup Marinara Sauce
1 cup Broccolini
1.5 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Season the chicken breast with salt and pepper on both sides.
Lightly coat the chicken breast with olive oil, then dredge it in the panko breadcrumbs mixed with grated Parmesan cheese.
Place the coated chicken on a baking sheet lined with parchment paper. Spoon the marinara sauce evenly over the top of the chicken.
Arrange the broccolini around the chicken on the sheet. Drizzle a little more olive oil over the broccolini and season with salt and pepper.
Bake in the oven for 20-25 minutes, or until the chicken is cooked through and the breadcrumbs are crispy.
Remove from the oven and serve warm.
