INGREDIENTS
5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1/4 cup Plain Nonfat Greek Yogurt
1 Garlic Clove
2 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Season the salmon fillet with salt and pepper on both sides.
Heat 1 tsp of olive oil in a sauté pan over medium-high heat. Once the oil is shimmering, add the salmon skin-side down and cook for about 3-4 minutes until the skin is crispy. Flip and cook for an additional 3 minutes, or until desired doneness is reached.
Meanwhile, steam the green beans in a steamer or microwave until tender-crisp, about 4-5 minutes. In a small pan, heat a small drizzle of olive oil, add the minced garlic clove, and toss the steamed green beans quickly to coat with the garlicky flavor. Season with a pinch of salt.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer them to a bowl and blend with the Greek yogurt and the remaining 1 tsp olive oil until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside a generous serving of garlicky green beans and a scoop of cauliflower mash. Serve immediately.
