INGREDIENTS
1 can (15 oz) Black Beans, drained
10 Medjool Dates
1/2 cup Unsweetened Cocoa Powder
3 tbsp Almond Butter
3 scoops Pea Protein Powder
1 tbsp Ground Flaxseed (with water for a flax egg)
2 tbsp Chopped Walnuts
1 tsp Baking Powder
1 tsp Vanilla Extract
Pinch of Salt
PREPARATION
Preheat your oven to 350°F (175°C) and line a small baking pan with parchment paper.
In a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of water and set aside for 5 minutes to thicken, creating a flax egg.
Rinse and drain the black beans. Add them to a food processor along with the Medjool dates, unsweetened cocoa powder, almond butter, pea protein powder, and the prepared flax egg.
Add the baking powder, vanilla extract, and a pinch of salt to the mixture. Process until the mixture is completely smooth and uniform.
Stir in the chopped walnuts manually, ensuring they are evenly distributed in the batter.
Pour the batter into the prepared baking pan and smooth out the top.
Bake for 20-25 minutes until the edges begin to pull away slightly and a toothpick inserted in the center comes out mostly clean.
Allow the brownies to cool in the pan for at least 10 minutes before slicing into 4 equal portions. Enjoy as a nourishing treat perfect for breakfast, lunch, or dinner.
