4 oz Salmon Fillet
1/2 cup cooked Brown Rice
1 cup Broccoli
2 tsp Olive Oil
1/2 Lemon (zest & juice)

Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Place the salmon fillet on a lined baking sheet. Drizzle 1 teaspoon of olive oil over the salmon.
Sprinkle the salmon with lemon zest, fresh dill, garlic powder, salt, and pepper. Squeeze half a lemon over the top.
On a separate baking tray, toss the broccoli with the remaining teaspoon of olive oil, salt, and pepper.
Put both trays in the oven. Roast the salmon for about 12-15 minutes until it flakes easily with a fork. Roast the broccoli for around 15 minutes until edges are crispy.
