INGREDIENTS
6 oz Chicken Breast
1 medium Red Bell Pepper
1/2 medium Zucchini
1/4 medium Red Onion
1/2 cup White Button Mushrooms
1 tbsp Extra Virgin Olive Oil
2 tbsp Lemon Juice
1 clove Garlic
1 tsp Dried Oregano
Salt and Pepper to taste
PREPARATION
In a small bowl, whisk together lemon juice, olive oil, minced garlic, dried oregano, salt, and pepper to create the marinade.
Place the chicken breast in a shallow dish and pour half of the marinade over it. Let it marinate in the fridge for at least 30 minutes.
While the chicken is marinating, cut the red bell pepper into chunks, slice the zucchini into thick rounds, cut the red onion into wedges, and clean the button mushrooms.
Skewer the vegetables alternately onto grill-safe skewers.
Preheat your grill to medium-high heat.
Grill the marinated chicken breast for about 6-7 minutes per side or until the internal temperature reaches 165°F.
At the same time, grill the vegetable skewers for about 8-10 minutes, turning occasionally until they are slightly charred and tender.
Remove all items from the grill, slice the chicken if desired, and drizzle any remaining marinade over the vegetables for extra flavor.
Serve the grilled chicken alongside the crispy vegetable skewers and enjoy!
