Seared Salmon Fillet with Garlic Green Beans and Mashed Sweet Potato
Enjoy tender seared wild salmon paired with crisp garlic sautéed green beans and a creamy, velvety mashed sweet potato. This dish delivers a burst of flavors from the garlic-infused beans and the natural sweetness of the mashed potato, balanced perfectly by the rich, savory salmon.
INGREDIENTS
7 oz Salmon Fillet (200g)
1 cup Green Beans (125g)
2 cloves Garlic (6g)
1 tsp Olive Oil (5g)
1 medium Sweet Potato (150g)
2 tbsp Unsweetened Almond Milk (30g)
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon skin-side down for about 4-5 minutes, then flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon is cooking, steam or boil the green beans until tender-crisp, about 4-5 minutes.
In a small pan, heat olive oil over medium heat. Add minced garlic (from 2 cloves) and sauté until fragrant, then toss the steamed green beans in the garlic oil. Season with a pinch of salt.
Meanwhile, peel and cube the sweet potato. Boil the cubes in lightly salted water until tender, about 10-12 minutes. Drain and mash with unsweetened almond milk and a pinch of salt until smooth.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of mashed sweet potato, and serve warm.
