INGREDIENTS
6 oz Salmon Fillet
1 cup Fresh Green Beans
1 cup Cauliflower
1/4 cup Nonfat Greek Yogurt
1 tsp Olive Oil
2 tsp Butter
3 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season generously with salt and pepper.
Heat a non-stick skillet over medium-high heat. Add 1 teaspoon olive oil and let it warm up.
Place the salmon in the skillet, skin-side down if applicable, and sear for about 3-4 minutes on each side until a golden crust forms and the salmon is just cooked through.
While the salmon cooks, steam or boil the green beans for 3-4 minutes until they are crisp-tender. In a separate pot, steam the cauliflower until very tender, about 8-10 minutes.
In a small pan, lightly sauté 2 minced garlic cloves in 1 teaspoon butter until fragrant, then toss the cooked green beans in the garlic butter and set aside.
Transfer the steamed cauliflower to a bowl. Add 3 minced garlic cloves, 1/4 cup nonfat Greek yogurt, 1 teaspoon butter, and season with salt and pepper. Blend or mash until smooth and well combined.
Plate the dish by placing the cauliflower mash as a base, top with the seared salmon, and arrange garlic green beans along the side. Serve immediately.
