INGREDIENTS
5 oz Chicken Breast
1/4 cup Panko Breadcrumbs
1/4 cup Fresh Orange Juice
1 tsp Honey
1 tbsp Low-Sodium Soy Sauce
2 cloves Fresh Garlic
1 tsp Fresh Ginger
1 cup Broccoli
1/2 tbsp Olive Oil
1 tsp Orange Zest
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a shallow dish, combine the panko breadcrumbs with a pinch of salt and half the orange zest. Dredge the chicken breast in the breadcrumbs, ensuring an even coating on all sides.
In a small saucepan, combine the fresh orange juice, honey, soy sauce, minced garlic, grated ginger, and remaining orange zest. Bring to a simmer over medium heat and let it reduce slightly to form a light glaze.
Place the breaded chicken on the baking sheet. Brush the chicken with part of the orange glaze for extra flavor.
On a separate baking tray, toss the broccoli with olive oil, a pinch of salt, and pepper.
Place both the chicken and broccoli in the oven. Bake the chicken for about 18-20 minutes or until cooked through and crispy, and roast the broccoli for 12-15 minutes until tender and slightly charred.
Halfway through cooking, brush the chicken with more orange glaze to enhance the flavor.
Once done, plate the chicken alongside the roasted broccoli and drizzle any remaining glaze over the top. Serve immediately.
