INGREDIENTS
4 oz Salmon Fillet
1 oz unsalted Pistachios, crushed
1 cup Asparagus
1 tsp Olive Oil
1 tbsp Lemon Juice
1 clove Garlic, minced
1 tbsp Fresh Dill, chopped
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Place the asparagus on a baking sheet and drizzle with olive oil, lemon juice, minced garlic, salt, and pepper. Toss to coat evenly.
Roast the asparagus in the oven for about 10-12 minutes until tender-crisp.
Meanwhile, pat the salmon fillet dry with a paper towel. Season with salt and pepper on both sides.
On a clean surface, coarsely crush the pistachios. Press the salmon fillet into the crushed pistachios so that they adhere to the surface, creating an even crust.
Place the crusted salmon on a lightly greased baking dish or a lined baking sheet.
Bake the salmon in the oven for about 10-12 minutes, or until the salmon is just cooked through and flakes easily with a fork.
Once both the asparagus and salmon are done, plate the salmon and arrange the roasted asparagus alongside.
Garnish with a sprinkle of fresh dill and an additional squeeze of lemon if desired before serving.
