INGREDIENTS
1 large Red Bell Pepper (150g)
3 ounces Lean Ground Turkey (90% lean, 85g)
1 ounce Lean Turkey Pepperoni (28g)
1/4 cup Low-Fat Shredded Cheddar Cheese (28g)
1/2 cup Marinara Sauce (125g)
2 Egg Whites (66g)
PREPARATION
Preheat your oven to 375°F (190°C).
Cut the top off the bell pepper and remove the seeds and membranes. If preferred, lightly roast the pepper for 5 minutes to soften it slightly.
In a mixing bowl, combine the lean ground turkey, diced turkey pepperoni, egg whites, and marinara sauce. Stir until evenly mixed.
Carefully spoon the mixture into the hollowed bell pepper, packing it well but being cautious not to overfill.
Sprinkle the low-fat shredded cheddar cheese evenly on top of the stuffing.
Place the stuffed pepper in a baking dish and bake for 20-25 minutes until the turkey is cooked through and the cheese is melted and bubbly.
Remove from oven, let cool slightly, and serve warm.
