INGREDIENTS
6 oz Boneless Skinless Chicken Breast
1 cup Broccoli
1 tbsp Olive Oil
1 tbsp Cornstarch
1 medium Orange
1 tbsp Low-Sodium Soy Sauce
1 tsp Honey
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
Pat the chicken breast dry and season with salt, pepper, and garlic powder. Lightly coat the chicken with cornstarch for a crispy finish.
For the orange sauce, zest the orange and squeeze out the juice into a small bowl. Stir in the low-sodium soy sauce and honey. Set aside.
Place the chicken on one side of the baking sheet. Toss the broccoli with olive oil, salt, and pepper, and spread it on the other side of the baking sheet.
Roast in the preheated oven for 18-22 minutes, or until the chicken is cooked through and the broccoli is tender with crispy edges.
In the last 5 minutes of cooking, brush the orange sauce over the chicken to allow it to glaze.
Remove from the oven, let rest for a couple of minutes, and serve the sliced chicken alongside the roasted broccoli.
