INGREDIENTS
7 oz Salmon Fillet (198g)
1 cup Fresh Asparagus (134g)
1 cup Cauliflower (107g)
1/2 tsp Olive Oil
1/2 tsp Unsalted Butter
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat; add 1/2 tsp olive oil.
Sear the salmon fillet for about 3-4 minutes per side until a golden crust forms and the fish is just cooked through.
While the salmon sears, steam the asparagus in a steamer basket over boiling water for 4-5 minutes until tender-crisp.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes).
Transfer the steamed cauliflower to a bowl and blend with 1/2 tsp butter, a pinch of salt and pepper until smooth and creamy.
Plate the salmon with steamed asparagus on the side, and serve the cauliflower mash alongside.
Garnish with extra pepper if desired and enjoy your nutrient-rich dinner.
