PREPARATION
Shuck the oysters carefully, ensuring you retain as much of the liquor as possible in each shell.
Finely mince the shallot and chop the fresh parsley. Combine them in a small bowl.
Add the juice of one medium lemon to the bowl with shallot and parsley.
