Seared Salmon with Steamed Asparagus and Garlic Cauliflower Mash
Enjoy a vibrant plate of seared salmon accompanied by tender steamed asparagus and a creamy garlic cauliflower mash. The rich, flaky salmon is perfectly seared and seasoned, while the lightly steamed asparagus offers a fresh crunch, and the garlicky cauliflower mash brings a comforting, velvety texture to the dish.
INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower
1 tsp Extra Virgin Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season both sides lightly with salt and pepper.
Preheat a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes until the skin is crisp.
Flip the salmon carefully, and cook for an additional 3-4 minutes until it is just cooked through. Remove from the pan and set aside.
While the salmon is cooking, steam the asparagus until tender, about 4-5 minutes. Season with a pinch of salt.
For the cauliflower mash, steam 1.5 cups of cauliflower florets (with 2 minced garlic cloves added for flavor) until very tender, about 8-10 minutes.
Transfer the steamed cauliflower and garlic into a blender or use an immersion blender. Add 1 tsp of extra virgin olive oil and blend until smooth and creamy. Adjust the seasoning with salt and pepper as desired.
Plate the seared salmon with a serving of steamed asparagus and a generous scoop of garlic cauliflower mash. Serve immediately.
