INGREDIENTS
1 medium Russet Potato (150g)
5 ounces Lean Ground Turkey (140g)
1/3 cup Nonfat Greek Yogurt (80g)
1/2 teaspoon Olive Oil
Pinch each of Salt and Black Pepper
1 teaspoon Garlic Powder
PREPARATION
Preheat your oven to 425°F. Wash and scrub the potato thoroughly. Pat dry, then lightly rub with olive oil and sprinkle a pinch of salt over it to help crisp the skin.
Place the potato directly on the oven rack or on a baking sheet and bake for 45-50 minutes, until the skin is crispy and the inside is tender.
While the potato bakes, heat a non-stick skillet over medium heat. Add the lean ground turkey along with garlic powder, additional salt, and black pepper to taste. Cook the turkey, breaking it up with a spoon, until it is fully browned and cooked through, about 6-8 minutes.
Once the potato is done, remove it from the oven and carefully cut a slit down the middle. Fluff the insides with a fork.
Top the potato with the cooked ground turkey, then add a dollop of nonfat Greek yogurt for a creamy finish. Sprinkle additional black pepper if desired and serve warm.
