INGREDIENTS
6 oz Chicken Breast
1/4 cup Panko Breadcrumbs
1 large Egg White
1/4 cup Tomato Sauce
2 tbsp Parmesan Cheese
1 cup Broccoli
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Prep the chicken breast by pounding it to an even thickness for uniform cooking.
Place the egg white in a shallow bowl. In another shallow dish, add the panko breadcrumbs seasoned with salt and pepper.
Dip the chicken breast into the egg white, then coat evenly with the panko breadcrumbs.
Place the breaded chicken on a lightly greased baking sheet and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the coating is crispy.
While the chicken bakes, toss the broccoli with olive oil, salt, and pepper on a separate baking tray.
Roast the broccoli in the oven for approximately 15 minutes until tender and slightly charred.
In the last 5 minutes of the chicken's baking time, spoon tomato sauce over the chicken and sprinkle the Parmesan cheese on top, then return to the oven to meld the flavors.
Remove both trays from the oven and let sit for a couple minutes before serving to allow flavors to set.
