INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tsp Olive Oil
1 Garlic Clove
Salt & Black Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil.
Sear the salmon skin-side down for about 3-4 minutes, then flip and cook for another 3-4 minutes until just cooked through.
Meanwhile, bring a small pot of water to a simmer and add the green beans. Cook for about 4-5 minutes until tender-crisp, then drain.
In a separate pan, heat the remaining olive oil over medium heat. Add the minced garlic (from about 1 clove) and sauté until fragrant, then add the cooked green beans to toss and coat with the garlic oil.
Steam the cauliflower until very tender, about 8-10 minutes. Transfer to a bowl and mash with a fork or immersion blender until smooth. Season with a pinch of salt and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm and enjoy.
