INGREDIENTS
200g Extra-Firm Tofu
75g Shelled Edamame
100g Broccoli
50g Carrot
50g Red Bell Pepper
1 tsp Sesame Oil
1 tbsp Sesame Seeds
2 cloves Garlic
1 tsp Fresh Ginger
1 tbsp Low-Sodium Soy Sauce
PREPARATION
Drain and press the tofu to remove excess water, then cut into 1-inch cubes.
Heat a non-stick skillet over medium-high heat and add the sesame oil.
Add tofu cubes to the skillet and cook until all sides are golden and crispy, about 6-8 minutes.
While tofu cooks, chop broccoli into florets, slice the carrot into thin matchsticks, and cut the red bell pepper into strips.
Add minced garlic and grated ginger to the skillet with tofu, stirring for about 30 seconds until fragrant.
Incorporate the chopped vegetables and shelled edamame into the pan, stirring constantly for 3-4 minutes to soften slightly while remaining crisp.
Drizzle low-sodium soy sauce over the stir-fry and toss to combine evenly.
Remove from heat, sprinkle with sesame seeds, and serve immediately.
