INGREDIENTS
1 scoop Chocolate Protein Powder (30g)
3 large Egg Whites (approx. 99g)
1/4 cup Almond Flour (28g)
1/4 cup Unsweetened Applesauce (65g)
1 tbsp Unsweetened Cocoa Powder (5g)
1/4 cup Unsweetened Almond Milk (60g)
1/2 tsp Baking Powder
1 tsp Liquid Stevia
PREPARATION
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
In a medium bowl, whisk together the chocolate protein powder, almond flour, cocoa powder, and baking powder.
In a separate bowl, combine the egg whites, unsweetened applesauce, unsweetened almond milk, and liquid stevia. Mix well until smooth.
Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix to keep the muffins light and moist.
Spoon the batter evenly into the muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
