Enjoy a light yet satisfying dish featuring tender roasted spaghetti squash paired with savory lean ground turkey simmered in a flavorful fresh marinara. This recipe offers a delightful mix of textures and bright, herby accents that elevate every bite.
INGREDIENTS
1.5 cups cooked Spaghetti Squash (approx. 150g)
7 oz Lean Ground Turkey (approx. 198g)
0.5 cup Fresh Marinara Sauce (approx. 125g)
0.5 tablespoon Olive Oil
1/4 medium Onion, chopped (approx. 25g)
1 clove Garlic, minced
1 tablespoon Fresh Basil, chopped
PREPARATION
Preheat your oven to 400°F.
Slice the spaghetti squash in half lengthwise and remove the seeds. Drizzle with a small amount of olive oil and season lightly with salt and pepper.
Place the squash halves cut-side down on a baking sheet and roast for about 30-40 minutes, or until tender and easily shredded with a fork.
While the squash roasts, heat the remaining olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent.
Add the minced garlic and cook briefly before adding the lean ground turkey. Cook the turkey, breaking it apart with a spatula, until browned and cooked through.
Stir in the fresh marinara sauce and let the mixture simmer for 5-7 minutes, allowing the flavors to meld.
When the spaghetti squash is ready, use a fork to gently shred the flesh into spaghetti-like strands.
Plate the roasted spaghetti squash and top with the savory ground turkey marinara mixture. Garnish with fresh chopped basil and serve warm.
