INGREDIENTS
5.5 oz Salmon Fillet
1 cup Asparagus
2 cups Cauliflower Florets
1 clove Garlic
1/4 cup Unsweetened Almond Milk
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for roasting the asparagus.
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil. Sear the salmon fillet skin-side down for about 3 minutes, then flip and cook for another 3 minutes. Alternatively, finish cooking in the oven if preferred.
Toss the asparagus with a light drizzle of olive oil, salt, and pepper. Spread out on a baking sheet and roast in the preheated oven for about 10 minutes, until tender and slightly caramelized.
For the cauliflower mash, steam the cauliflower florets along with the garlic clove until very soft, about 8-10 minutes.
Transfer the steamed cauliflower and garlic to a blender, add the unsweetened almond milk, and blend until smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the roasted asparagus and a generous serving of garlic cauliflower mash. Serve warm and enjoy your nutritious dinner.
