1 tbsp Unsalted Butter (14g)
1/2 bunch Asparagus (100g)
1 tsp Olive Oil (5g)
2 cloves Garlic
1 Lemon wedge
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Rinse and pat dry the shrimp. Season lightly with salt and pepper.
Trim the woody ends off the asparagus and place on a baking sheet. Drizzle with olive oil, season with a pinch of salt and pepper, and roast in the oven for 10-12 minutes until tender.
While the asparagus roasts, heat a non-stick skillet over medium-high heat. Add the shrimp and minced garlic to the dry skillet (or lightly spray with a bit of cooking spray) and sear for about 2-3 minutes per side until the shrimp turn pink and opaque.
