INGREDIENTS
350 grams Firm Tofu
0.5 cup Shelled Edamame (approx. 77g)
1 medium Red Bell Pepper
1 cup Broccoli
0.5 cup Snow Peas
1 small Yellow Onion
1 tsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
2 cloves Minced Garlic
1 tsp Fresh Ginger, minced
1 tsp Sesame Seeds
PREPARATION
Press the tofu between paper towels or a clean kitchen towel for about 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with a small amount of low-sodium soy sauce and a sprinkle of sesame seeds.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the pan and stir-fry until they turn golden and crispy on all sides. Remove tofu from the pan and set aside.
In the same pan, add the minced garlic, fresh ginger, and sliced yellow onion. Sauté for about 1-2 minutes until fragrant.
Add the red bell pepper, broccoli, and snow peas to the pan. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.
Return the crispy tofu to the pan along with the shelled edamame. Drizzle in the remaining soy sauce and rice vinegar, tossing all ingredients to combine and heat through.
Finish by sprinkling additional sesame seeds over the top and serve immediately.
