300 grams Extra Firm Tofu
1 cup Broccoli (approx 91g)
1 cup cooked Quinoa
1 tablespoon Olive Oil
2 cloves Garlic
1 teaspoon Mixed Dried Herbs
Salt & Pepper to taste
PREPARATION
Press the tofu to remove excess moisture and cut into 1/2-inch cubes.
In a bowl, combine the tofu cubes with half of the olive oil, minced garlic, dried herbs, salt, and pepper.
Preheat the oven to 400°F (200°C). Arrange the tofu on a baking sheet lined with parchment paper. Bake for 25-30 minutes, turning halfway, until the tofu edges are crispy.
Toss the broccoli with a drizzle of the remaining olive oil, a pinch of salt, and pepper. Spread on another baking sheet and roast in the oven for 15 minutes until tender and slightly browned.
While tofu and broccoli roast, prepare the quinoa. Fluff the cooked quinoa with a fork. If desired, season lightly with salt and pepper.
