120g Firm Tofu
1/2 medium Onion
2 Garlic cloves
1 teaspoon Ginger
1/2 cup Diced Tomatoes
1/4 cup Light Coconut Milk
1/2 teaspoon Turmeric Powder
1/2 teaspoon Cumin Powder
1/2 teaspoon Coriander Powder
Salt & Pepper to taste
PREPARATION
Rinse the red lentils thoroughly under cold water and set aside.
Dice the onion, mince the garlic, and grate or finely chop the ginger.
Heat a non-stick pan over medium heat. Add the onion, garlic, and ginger, sautéing until the onion becomes translucent.
Stir in the turmeric, cumin, and coriander powders, allowing the spices to bloom for about 30 seconds.
Add the rinsed red lentils and the diced tomatoes to the pan. Pour in about 1.5 cups of water, bring to a gentle simmer, and let it cook for 15-20 minutes until the lentils soften.
Meanwhile, drain and cube the firm tofu.
Once the lentils are tender, stir in the tofu cubes and light coconut milk. Allow the dal to simmer for another 5 minutes so the flavors meld.
