1/4 cup diced Onion (40g)
2 tsp Olive Oil (10g)
1 slice Whole Grain Toast (40g)
PREPARATION
Preheat a non-stick skillet over medium heat and add 2 teaspoons of olive oil.
Dice the onion, chop the bell pepper, and roughly chop the spinach. Halve the tomato if using a whole medium tomato.
Add the diced onion and bell pepper to the skillet and sauté for 2-3 minutes until they begin to soften.
Pour in the egg whites and add the turkey sausage (sliced if preferred) along with the spinach. Stir gently so the ingredients mix well.
Cook for about 3-4 minutes until the egg whites are set and the sausage is warmed through. Toss in the tomato in the last minute of cooking to warm slightly.
