300g Firm Tofu
1/2 cup Shelled Edamame
1 cup Chopped Broccoli
1 cup Sliced Red Bell Pepper
1 medium Carrot
1 tbsp Cornstarch
1 tbsp Sesame Seeds
1 tsp Olive Oil
1 tbsp Soy Sauce
1 clove Fresh Garlic
1 tsp Fresh Ginger
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut it into 1-inch cubes.
In a medium bowl, toss the tofu cubes gently with cornstarch until evenly coated.
Heat olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add a little more olive oil if necessary and sauté the minced garlic and grated ginger until fragrant, about 30 seconds.
