250g Firm Tofu
1 cup White Beans (Cannellini)
1 cup Kale, chopped
2 cloves Garlic
1 tbsp Olive Oil
1 tbsp Cornstarch
Salt & Pepper to taste
PREPARATION
Press and drain the tofu to remove excess moisture. Cut it into 1-inch cubes.
Lightly toss the tofu cubes with cornstarch, salt, and pepper to coat evenly.
Heat a non-stick pan over medium heat and add half the olive oil. Sauté the tofu cubes until all sides are crispy and golden, about 8-10 minutes. Remove and set aside.
In the same pan, add the remaining olive oil and sauté minced garlic until fragrant, about 30 seconds.
Add the chopped kale to the pan and stir until it begins to soften, about 2 minutes. Pour in the white beans and continue cooking until the beans are heated through and kale is tender, about 3-4 minutes. Season with salt and pepper.
Plate the garlicky greens and bean mixture and top with the crispy tofu. Serve immediately.
