INGREDIENTS
4 ounces Chicken Breast
1 cup Whole Wheat Pasta (cooked)
1 medium Red Bell Pepper, sliced
1 teaspoon Olive Oil
1 teaspoon Cajun Seasoning
Salt & Pepper to taste
PREPARATION
Bring a pot of water to a boil and cook the whole wheat pasta according to the package directions until al dente. Drain and set aside.
Season the chicken breast evenly with Cajun seasoning, salt, and pepper.
Heat a teaspoon of olive oil in a skillet over medium-high heat. Once hot, add the chicken breast.
Cook the chicken for about 5-6 minutes per side, or until fully cooked and slightly charred on the edges. Remove from the skillet and let it rest for a couple of minutes before slicing.
In the same skillet, add sliced red bell pepper and sauté for 2-3 minutes until they are slightly soft but still retain a crunch.
Slice the chicken into strips and toss gently with the cooked pasta and sautéed bell peppers. Adjust seasoning with additional salt and pepper if needed.
Serve warm and enjoy the spicy, savory flavors.
