Savor a bright and fresh chicken dish paired with creamy garlic mashed potatoes and crisp roasted green beans. The lemon herb-infused chicken is seared to a perfect golden brown while the potatoes, blended with a hint of butter and roasted garlic, and perfectly roasted green beans, create a balanced, flavorful plate that's satisfying and nutritious.
INGREDIENTS
5 oz Chicken Breast
0.5 medium Potato (for mashed potatoes)
1 tsp Unsalted Butter
1 clove Garlic
1 cup Green Beans
1 tbsp Lemon Juice
1 tbsp Mixed Fresh Herbs
1 tsp Olive Oil
PREPARATION
Pat the chicken breast dry and season both sides with salt, pepper, and half of the mixed fresh herbs.
Heat a teaspoon of olive oil in a pan over medium-high heat. Once hot, add the chicken breast and sear for about 4-5 minutes per side until golden brown and cooked through. In the last minute, drizzle with lemon juice and sprinkle the remaining herbs on top.
Meanwhile, boil the halved potato in lightly salted water until tender, about 10-12 minutes. Drain and return to the pot.
Mince the garlic and add it to the potatoes along with the teaspoon of unsalted butter. Mash until smooth and creamy, adjusting seasoning with salt and pepper as desired.
Preheat your oven to 425°F (220°C). Toss the green beans with a pinch of salt, pepper, and a drizzle of olive oil. Spread on a baking sheet and roast for 10-12 minutes until tender with some charred spots.
Plate the chicken alongside a serving of the buttery garlic mashed potatoes and a side of roasted green beans. Garnish with an extra squeeze of lemon if desired and serve warm.
