Enjoy a vibrant, well-balanced dinner featuring a perfectly seared salmon fillet served alongside tender steamed asparagus and a creamy cauliflower mash. This dish highlights fresh flavors enhanced with a hint of garlic and zesty lemon, making every bite a satisfying, nutrient-packed experience.
INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tbsp Olive Oil
1 tbsp Lemon Juice
1 clove Garlic
Salt and Pepper (to taste)
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a skillet over medium-high heat and add half of the olive oil. Sear the salmon for about 3-4 minutes on each side until it reaches your desired doneness. Drizzle with lemon juice at the end and remove from heat.
While the salmon cooks, steam the asparagus in a steamer or in a covered pot with a small amount of water for 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam or boil the cauliflower florets until very tender (about 8-10 minutes). Drain and place in a bowl. Add the garlic, remaining olive oil, and blend with a fork or immersion blender until creamy. Season with salt and pepper to taste.
Plate the seared salmon with a side of steamed asparagus and a generous serving of cauliflower mash. Serve warm and enjoy!
