PREPARATION
In a bowl, combine the part-skim ricotta cheese, egg white, and whole wheat flour with a pinch of salt and pepper until a soft dough forms.
Lightly dust a work surface with whole wheat flour and gently roll the dough into a long rope, then cut into small pieces to form gnocchi.
Bring a pot of salted water to a boil and gently drop in the gnocchi. When they float to the surface (about 2-3 minutes), remove with a slotted spoon and set aside.
