1 medium head Cauliflower (600g)
1/2 cup roasted Chickpeas (approx. 82g)
3/4 cup Nonfat Greek Yogurt (180g)
2 tsp Olive Oil
2 tbsp Buffalo Wing Sauce
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Break the cauliflower into bite-sized florets and place them in a large bowl.
Add 2 tsp olive oil, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt, and pepper to the cauliflower. Toss well to evenly coat.
Spread the seasoned cauliflower florets on a baking sheet in a single layer.
Roast in the oven for 20-25 minutes until the edges are crispy and the cauliflower is tender.
Meanwhile, if not already roasted, drain and rinse the chickpeas, toss lightly with a little salt (and a tiny drizzle of olive oil if desired), and roast on a separate sheet at 425°F for 15-20 minutes until crunchy.
