INGREDIENTS
4 oz Chicken Breast
1 cup Whole Wheat Pasta (cooked)
1 cup Zucchini (sliced/cooked)
1 medium Red Bell Pepper (sliced)
1/2 cup Cherry Tomatoes
1 tsp Olive Oil
1 tsp Cajun Seasoning
1 clove Garlic
PREPARATION
Bring a pot of water to a boil and cook the whole wheat pasta according to package instructions until al dente; drain and set aside.
While the pasta is cooking, pat the chicken breast dry and season both sides with Cajun seasoning.
Heat the olive oil in a non-stick skillet over medium heat. Add the garlic and sauté for about 30 seconds until fragrant.
Add the chicken breast to the skillet and cook for about 5-6 minutes per side, or until the internal temperature reaches 165°F. Remove the chicken and slice into strips.
In the same skillet, add the sliced zucchini and red bell pepper. Sauté for about 3-4 minutes until they begin to soften.
Stir in the cherry tomatoes and heat through for another 1-2 minutes.
Toss the cooked pasta with the sautéed veggies, then top with sliced Cajun chicken. Adjust seasoning if needed and serve warm.
