Enjoy a perfectly seared salmon paired with crisp steamed asparagus and a velvety cauliflower mash brought to life with a touch of Greek yogurt and olive oil. This dish offers a harmonious blend of savory flavors and satisfying textures, making it both nourishing and delicious.
INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1/3 cup Nonfat Greek Yogurt
3 tsp Olive Oil
Salt and Pepper to taste
1 tbsp Lemon Juice
PREPARATION
Pat the salmon dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Place the salmon fillet skin-side down and sear for about 4 minutes until a crisp crust forms. Flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon cooks, steam the asparagus in a steamer basket over boiling water for about 5 minutes until tender but still crisp.
Meanwhile, steam the cauliflower florets until very tender, about 8-10 minutes, then transfer to a bowl.
Add the nonfat Greek yogurt and remaining 2 tsp of olive oil to the cauliflower. Season with salt, pepper, and a squeeze of lemon juice. Mash until smooth and creamy.
Plate the seared salmon with a side of steamed asparagus and a generous scoop of cauliflower mash. Drizzle a bit more lemon juice over the top if desired.
