INGREDIENTS
400g Extra-Firm Tofu
1 tbsp Olive Oil
2 cups Fresh Spinach
1 cup Mixed Greens
1 clove Garlic
1 tbsp Fresh Lemon Juice
1 tbsp Fresh Herbs (Thyme, Oregano)
Salt and Pepper to taste
PREPARATION
Press the tofu for 15-20 minutes to remove excess moisture and then cut into 1/2-inch thick steaks.
In a shallow dish, drizzle half the olive oil and add chopped fresh herbs, salt, and pepper. Brush the tofu steaks on both sides with the herbed oil mixture.
Heat the remaining olive oil in a non-stick pan over medium heat. Once hot, add the tofu steaks and sear for 3-4 minutes on each side until golden and crispy on the edges.
Meanwhile, in another pan, lightly sauté minced garlic in a tiny drizzle of oil until fragrant, then add the spinach and mixed greens. Sauté for 1-2 minutes until just wilted, and finish with a squeeze of lemon juice, salt, and pepper.
Plate the tofu steaks alongside the garlicky greens. Serve immediately and enjoy the herbaceous, savory flavors.
