Enhanced with a touch of sesame oil and soy sauce, and sprinkled with toasted sesame seeds, this dish brings a satisfying crunch and a perfect balance of savory and fresh flavors.
INGREDIENTS
300g Extra Firm Tofu
1/2 cup Shelled Edamame (75g)
1 cup Broccoli (91g)
1 medium Red Bell Pepper (120g)
1 medium Carrot (61g)
1/2 cup Snap Peas (50g)
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture. Cut the tofu into bite-sized cubes.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the tofu cubes and stir-fry until they turn golden and slightly crispy on all sides.
Add the shelled edamame, chopped broccoli, sliced red bell pepper, carrot pieces, and snap peas to the skillet. Stir-fry the vegetables with the tofu for about 4-5 minutes until they are tender-crisp.
Drizzle the low-sodium soy sauce over the stir-fry, tossing to combine all the flavors evenly.
Remove from heat and sprinkle the sesame seeds on top. Serve immediately and enjoy your crisp, colorful veggie-packed meal.
