INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1 tsp Olive Oil (for green beans)
1 cup Cauliflower
1 tsp Olive Oil (for mash)
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat. When hot, add the salmon fillet, skin-side down if applicable, and sear for about 4 minutes. Flip and cook for an additional 3-4 minutes or until desired doneness is achieved.
Meanwhile, steam the green beans until tender-crisp, about 4-5 minutes.
In a small pan, warm 1 teaspoon of olive oil with 1 minced garlic clove over medium heat. Toss the steamed green beans in the garlic oil and season with salt and pepper.
For the cauliflower mash, steam the cauliflower florets until soft, about 8-10 minutes. Transfer to a bowl, add 1 teaspoon olive oil and the remaining minced garlic, then mash until smooth. Season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve warm.
