0.75 cup dry Brown Lentils (150g)
1 cup diced Carrot
1 cup diced Celery
1 cup diced Tomatoes
0.5 cup diced Onion
2 cloves minced Garlic
1 cup Spinach
2 cups Low-Sodium Vegetable Broth
1 teaspoon Olive Oil
PREPARATION
Rinse the dry lentils thoroughly under cold water and set aside.
In a large pot, heat the olive oil over medium heat and add the diced onions and minced garlic. Sauté until the onions become translucent.
Add the diced carrots and celery to the pot. Stir and cook for about 3-4 minutes until they begin to soften.
