INGREDIENTS
6.5 oz Atlantic Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 Garlic Clove
1 tsp Olive Oil
0.5 tbsp Olive Oil (Drizzle)
PREPARATION
Pat the salmon dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the 0.5 tablespoon olive oil for drizzling.
Sear the salmon for about 3-4 minutes per side until you achieve a golden crust and desired doneness, then remove from heat.
Meanwhile, steam the asparagus in a steamer or in a covered pan with a splash of water for about 5 minutes until tender yet crisp.
For the garlic cauliflower mash, chop the cauliflower into florets and add to a pot with a peeled garlic clove. Cover with water and simmer until very tender (about 10 minutes).
Drain the cauliflower and garlic, then transfer to a bowl. Add 1 teaspoon olive oil and mash until smooth with a few small chunks for texture. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of garlic cauliflower mash. Serve immediately.
