INGREDIENTS
5 oz Salmon Fillet
1 small Sweet Potato
1 cup Asparagus
1 tbsp Lemon Juice
1 tsp Olive Oil
1 tsp Mixed Dried Herbs
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper. Cut the sweet potato into 1/2-inch rounds or cubes for quicker roasting and arrange them on one side of the sheet.
Drizzle the sweet potato with half of the olive oil, and season with a pinch of salt, pepper, and some of the mixed dried herbs.
Place the salmon fillet in the center of the baking sheet. Drizzle the lemon juice over the salmon, and then lightly brush with the remaining olive oil. Sprinkle additional mixed dried herbs, salt, and pepper as desired.
Toss the asparagus with a little salt, pepper, and a drizzle of olive oil (if desired) and add them to the baking sheet.
Roast everything in the oven for about 15-18 minutes, or until the salmon is opaque and flakes easily with a fork, the sweet potatoes are tender, and the asparagus has a slight char.
Remove from the oven, plate your meal, and enjoy your nutrient-packed, flavorful dinner.
